BeetSurrection Juice
I was in the Whole Foods in Charlottesville, VA recently where I was shoulder-to-shoulder with Sissy Spacek tasting Whole Foods’ newest cold pressed juice product. The juice barista was starstruck. I thought it was me…just kidding. I purchased the BEET-ternal juice. It was delicious. It is the conventional Apple Beet Carrot (called ABC juice in many juice bars) with the addition of KALE. Man, why didn’t I think of that? Everything is better with kale! When I got home, I had to make one for myself. Here is the Off The Grid Health version of this instant energy morning juice. It has 1248% DV of Vitamin A, 444% DV of Vitamin C, 40% DV of Calcium, 28% DV of Iron. If you are a geek for protein, you will be happy to know this meat-less, dairy-free drink has 9 grams of protein! We call it, The BeetSurrection.
Ingredients
- 1 beet root (peeled)
- 2 apples (granny smith or pink lady)
- 3 carrots
- 2 stalks of celery
- 6 leaves of Lacinato Kale.
Instructions
- Clean all produce.
- Peel beet root.
- Juice ingredients.
- Enjoy.
